Pre-heat and Bake @ 325
for
25 minutes
Brownie (Reference From: All Day I Dream About Food)
- 1 Cup Almond Flour
- ½ Cup Cocoa Powder
- ¾ Cup Swerve
- 6 Tbs Stevia
- 1 Stick of butter
- 4 oz of unsweetened chocolate
- 4 eggs
- ½ tsp Vanilla
- ½ Cup Chopped Walnuts
- ½ Cup of your favorite M&M’s (optional) I used Red Velvet
Whisk dry ingredients together till well combined. In a small
pot set on low, melt the butter and unsweetened chocolate. Beat eggs, vanilla, and
melted chocolate mix to the dry ingredients until well combined. Fold in
walnuts and M&M’s. Pour into an 8x8 glass dish (spray with coconut oil first). Once done cooking, set aside to cool. Then add icing and
place in refrigerator for a couple hours or overnight.
Cream Cheese Icing (Reference From: All Day I Dream About Food)
- 4 oz Cream Cheese
- ¾ Cup Coconut Oil
- 6 Tbs Swerve Powder
- 3 Tbs Stevia
- ½ Cup Heavy Whipping Cream
- 1 Tsp Vanilla Extract
Beat cream cheese and coconut oil
until well combined. Add the remaining ingredients. The icing will look thick
and has a slight coconut taste due to the oil. But taste wonderful on the brownie.
Notes: Swerve is expensive that’s why Stevia has been added
to the mixes. With the minimal amount of Stevia added there’s no after taste.
